Safflower

Safflower (Carthamus Tinctorius) is a plant of the family Asteraceae, which is also known as American saffron.This plant is known as false saffron (due to its use in counterfeit saffron).Safflower is a plant native to Iran.
The flowers of this plant contain carthamone, carthamin, flavonoids and the seeds contain linoleic and lineoleic acid.

Its flowers contain a red substance called cartamine, which is usually used to dye rice instead of saffron and in dyeing.
The flowers of this plant are also used to color food, especially cookies. Safflower is used as a very strong analgesic, regulating menstruation, removing phlegm, soothing, treating pain caused by osteoarthritis and treating rheumatism.
 Safflower oil is used to strengthen the immune system, treat jaundice, relieve menstrual cramps, treat pneumonia and vomiting.

 

In Iran, this plant is cultivated in most parts of the country in the form of two types. The first type is practiced in Khorasan, Isfahan and Shiraz and Kerman provinces .
